Individual Grilled Pizzas

Grilled pizza is one of my favorite summertime meals. Use traditional pizza toppings or be creative and change it up like the recipe below (Chicken Alfredo Grilled Pizza). The key to grilling pizza is to have all of your ingredients prepped and ready. The dough cooks very quickly so as soon as you flip it, add your toppings and close the lid to finish cooking. The fun part is everyone can create their own!!


INGREDIENTS FOR CHICKEN ALFREDO GRILLED PIZZA:

1 or 2 packages dry Pizza Dough mix. Mix according to package directions. Each package makes 2 personal size pizzas.

1 jar Alfredo Sauce

1/2 cup Basil Pesto Sauce

1 Rotisserie Chicken

1 package fresh Mozzarella Cheese Pearls, or slice pieces yourself

6 slices of precooked bacon, crumbled

Fresh Basil, julienne cut

DIRECTIONS:

Prepare pizza dough and set aside.

Mix the Alfredo sauce and pesto together in a bowl and set aside.

Chop chicken into bite size pieces and set aside.

Place the the cheese and basil in separate bowls.

GRILLING:

Heat grill to 375 degrees. Divide pizza dough into however many pizzas you wish to make. Shape into a rustic circle, spray one side with non-stick cooking spray and place on the grill for 3 to 4 minutes until golden brown. Flip dough with tongs and reduce the heat on the grill. Quickly top with Alfredo sauce, chicken, cheese and bacon. Close the lid and cook until cheese is melted. Slide off the grill onto a cookie sheet. Top with basil and it’s ready to serve!
